Pat the Cornish game hen dry with paper towels
Preheat the oven to 400°F
Season the hen inside and out with salt, pepper, and optional herbs or spices
Rub the skin with oil or melted butter
Place the hen breast-side up in a roasting pan or oven-safe skillet
Roast for 45 to 60 minutes, until the skin is golden and the internal temperature reaches 165°F in the thickest part of the thigh
Baste once or twice during cooking if desired
Let the hen rest for 10 minutes before serving
Carve and serve
