Sort the beans and remove any debris or damaged beans
Rinse the beans under cold water
Soak the beans in plenty of water for 8 to 12 hours
Drain and rinse the soaked beans
Place the beans in a pot and cover with fresh water by 2 to 3 inches
Bring to a boil
Boil hard for 10 minutes
Reduce to a simmer
Cook until tender, about 45 to 90 minutes
Skim off any foam if needed
Add salt only after the beans are mostly tender
Drain the beans when cooked
Use the beans in your recipe or store them in their cooking liquid
