Sort through the lima beans and remove any debris or damaged beans
Rinse the beans thoroughly under cold water
Soak dried lima beans in water for 6 to 8 hours or overnight
Drain and rinse the soaked beans
Place the beans in a pot and cover with fresh water
Bring to a boil, then reduce to a simmer
Cook until tender, about 45 to 60 minutes for soaked dried beans
Add salt and seasonings near the end of cooking
Drain the beans if needed
Serve or use in your recipe
