Preheat the oven to 300°F (150°C)
Remove the membrane from the back of the ribs
Pat the ribs dry with paper towels
Season both sides with salt, pepper, and your preferred dry rub
Wrap the ribs tightly in aluminum foil
Place the wrapped ribs on a baking sheet
Bake for 2.5 to 3.5 hours, depending on the size of the ribs
Unwrap the ribs carefully
Brush with barbecue sauce if desired
Increase the oven temperature to 425°F (220°C)
Return the ribs to the oven uncovered for 10 to 15 minutes
Remove from the oven and let rest for 10 minutes
Slice between the bones and serve
