Remove the membrane from the back of the ribs
Pat the ribs dry
Season generously with salt, pepper, and dry rub
Let the ribs rest with the seasoning for at least 30 minutes or overnight
Preheat the oven to 275°F
Wrap the ribs tightly in foil
Add a little apple juice, broth, or water before sealing if desired
Bake low and slow for 2.5 to 4 hours, depending on the size of the ribs
Check for tenderness; the meat should pull back from the bones
Unwrap the ribs carefully
Brush with barbecue sauce if desired
Broil or grill for a few minutes to caramelize the sauce
Let the ribs rest for 10 to 15 minutes before serving
Slice between the bones and serve
