How to Cook Steaks?

Choose steaks with good marbling

Pat steaks dry with paper towels

Season generously with salt and pepper

Let steaks sit at room temperature for 20 to 30 minutes

Preheat a skillet, grill, or broiler until very hot

Add a small amount of high smoke point oil if using a skillet

Place steaks in the hot pan or on the grill

Sear without moving until a crust forms

Flip once and cook the second side

Add butter, garlic, and herbs near the end if desired

Baste the steaks with melted butter if using a skillet

Check internal temperature with a meat thermometer

Remove steaks at desired doneness

Rest steaks for 5 to 10 minutes before slicing

Slice against the grain

Serve immediately
