Pat the filet dry with paper towels
Season both sides with salt and black pepper
Let the steak sit at room temperature for 20 to 30 minutes
Preheat a skillet or grill over high heat
Add a small amount of oil to the skillet if using one
Place the filet in the hot pan or on the grill
Sear for 2 to 4 minutes per side
Add butter, garlic, and herbs if desired during the last minute
Check the internal temperature with a meat thermometer
Remove at 125°F for rare
Remove at 130°F for medium-rare
Remove at 140°F for medium
Rest the filet for 5 to 10 minutes
Slice and serve
