Remove the steak from the refrigerator 20 to 30 minutes before cooking
Pat the steak dry with paper towels
Season both sides generously with salt and pepper
Preheat a skillet, grill, or cast-iron pan over high heat
Add a small amount of oil if using a pan
Place the steak on the hot surface
Cook the first side for 3 to 5 minutes
Flip the steak and cook the second side for 3 to 5 minutes
Check the internal temperature with a meat thermometer
Remove the steak when the center reaches 140°F to 145°F
Let the steak rest for 5 to 10 minutes before slicing
Slice against the grain and serve
