Wash and scrub the sweet potatoes
Pierce each sweet potato several times with a fork
Place a trivet in the Instant Pot
Add 1 cup of water
Place the sweet potatoes on the trivet
Close the lid and set the valve to sealing
Cook on High Pressure for 12 to 16 minutes for medium sweet potatoes
Cook on High Pressure for 18 to 22 minutes for large sweet potatoes
Let the pressure release naturally for 10 minutes
Quick release any remaining pressure
Remove the sweet potatoes carefully
Peel or slice and serve
