Preheat the oven to 400°F to 425°F
Wash and scrub the sweet potatoes
Dry the sweet potatoes thoroughly
Pierce each sweet potato several times with a fork
Place them on a baking sheet or directly on the oven rack
Roast for 45 to 60 minutes, depending on size
Turn once halfway through if using a baking sheet
Check for doneness by inserting a knife or fork into the center
Remove from the oven when very soft
Let cool slightly before handling
Split open and serve as desired
