Wash the sweet potatoes thoroughly
Peel them if desired
Trim off the ends
Cut each sweet potato into even rounds
Stack a few rounds and cut them into strips
Turn the strips and cut across them into cubes
Keep the cubes as uniform as possible for even cooking
Use immediately or store in cold water until ready to cook
