Wash the mango
Stand the mango upright on a cutting board
Find the flat seed in the center
Slice off one side of the mango about 1/4 inch from the center line
Slice off the other side the same way
Score the flesh in each cheek without cutting through the skin
Turn each cheek inside out
Cut or scoop out the cubes
Trim any remaining flesh from around the seed
Peel and cut the remaining pieces if needed
