Wash the mango
Place it on a cutting board with the stem end up
Find the flat pit in the center
Cut down one side of the pit to remove a cheek
Cut down the other side of the pit to remove the second cheek
Score the flesh of each cheek in a grid pattern without cutting through the skin
Push the skin side up to pop the cubes outward
Slice the cubes off the skin
Cut any remaining flesh from around the pit
Peel and slice the remaining pieces if needed
