Bring a pot of water to a boil
Prepare a bowl of ice water
Cut a small X on the bottom of each peach
Lower the peach into the boiling water for 30 to 60 seconds
Remove the peach with a slotted spoon
Immediately place it in the ice water for 30 seconds
Take the peach out and let it cool briefly
Peel the skin off starting at the X with your fingers or a paring knife
