Choose a ripe dragon fruit with slightly soft skin and vibrant color
Rinse the fruit under running water
Cut the fruit in half lengthwise
Scoop out the flesh with a spoon, or peel the skin off first and slice the flesh
Eat the flesh as-is
Optional: cut into cubes or slices for easier eating
Optional: sprinkle with lime juice, salt, or honey
Optional: add to smoothies, yogurt, cereal, or fruit bowls
Optional: blend seeds into smoothies or leave them for texture
Discard the skin and any bruised or overly mushy parts
Store leftover fruit in an airtight container in the refrigerator for up to 2–3 days
