Choose a ripe pitaya with bright, even color and slightly soft skin
Wash the outside thoroughly
Cut the fruit in half lengthwise
Scoop out the flesh with a spoon
Peel off the skin if preferred
Slice or cube the flesh
Eat it fresh as is
Add it to smoothies, bowls, salads, or desserts
Remove any seeds only if desired, though they are edible
Chill before eating for a firmer texture
