Choose a steak about 1 to 1.5 inches thick
Pat the steak dry with paper towels
Season both sides generously with salt and black pepper
Let the steak sit at room temperature for 20 to 30 minutes
Heat a skillet or grill over high heat until very hot
Add a small amount of oil if using a skillet
Place the steak on the hot surface
Cook without moving it for 2 to 4 minutes per side
Flip once and cook the other side for 2 to 4 minutes
Check for an internal temperature of 130 to 135°F
Remove the steak from heat
Let the steak rest for 5 to 10 minutes
Slice and serve
