Preheat the oven to 400°F
Wash the beets and trim off the tops and roots
Wrap each beet individually in aluminum foil or place them in a covered baking dish
Roast for 45 to 75 minutes, depending on size
Check doneness by piercing with a fork or knife
Remove from the oven and let cool slightly
Rub off the skins with your hands or a paper towel
Slice, cube, or serve whole as desired
