Wash the courgettes
Trim off both ends
Use a spiralizer, julienne peeler, or vegetable peeler
Spiralize or peel the courgettes into noodle-like strips
Remove the soft seedy center if needed
Pat the noodles dry with paper towels
Use immediately or cook briefly in a pan
Season as desired
