Wash the potatoes
Peel the potatoes if desired
Cut the potatoes into even pieces
Place the potatoes in a pot
Add cold water to cover the potatoes
Add salt to the water if desired
Bring the water to a boil
Reduce to a simmer
Cook until the potatoes are tender
Drain the potatoes
Return the potatoes to the pot
Add butter, oil, or seasonings if desired
Mash, fry, or serve as desired
