Pack cucumbers into clean jars with dill, garlic, and optional peppercorns or red pepper flakes
Combine vinegar, water, salt, and optional sugar in a bowl or saucepan
Stir until the salt dissolves completely
Pour the brine over the cucumbers until fully covered
Seal the jars with lids
Refrigerate for at least 24 hours before eating
Wait 3 to 7 days for best flavor
Keep refrigerated and use within 2 to 4 weeks
