Chill a mixing bowl and whisk
Pour cold heavy whipping cream into the bowl
Add powdered sugar to taste
Add vanilla extract if desired
Whisk by hand until soft peaks form
Or use an electric mixer on medium speed until thick and fluffy
Stop whipping before it turns grainy or separates
Spoon or pipe the whipped cream onto desserts
Keep refrigerated until use
