Cut beef into 1 to 1.5 inch cubes
Pat the meat dry
Season with salt and pepper
Heat oil in a heavy pot or skillet
Brown the meat in batches
Remove the meat from the pan
Sauté onions, garlic, and other aromatics if desired
Add tomato paste or flour if desired
Return the meat to the pot
Add broth, water, or other cooking liquid
Add vegetables and herbs if desired
Bring to a simmer
Cover and cook on low heat until tender
Stir occasionally and add liquid if needed
Adjust seasoning before serving
