Fill a saucepan with water and bring it to a gentle simmer
Add a splash of vinegar to the water (optional)
Crack an egg into a small bowl or cup
Create a gentle whirlpool in the simmering water with a spoon
Slide the egg into the water close to the surface
Poach until the whites are set and the yolk is still soft (about 3–4 minutes)
Remove the egg with a slotted spoon
Drain briefly on paper towel or a clean kitchen towel
Repeat with remaining eggs if needed
Serve immediately
