Wash the brinjal thoroughly
Trim the stem and remove any damaged parts
Cut the brinjal into slices, cubes, or halves as needed
Sprinkle salt if desired and let it sit for a few minutes
Rinse and pat dry if salted
Cook by frying, roasting, baking, grilling, or adding to curry
Stir occasionally until soft and fully cooked
Serve hot or use in your recipe
