Preheat the oven to 425°F (220°C)
Pat the chicken thighs dry with paper towels
Season both sides with salt, pepper, and any desired spices
Place the thighs skin-side up on a baking sheet or in a roasting pan
Add a little oil if desired
Roast for 35 to 45 minutes, until the skin is crisp and the internal temperature reaches 165°F (74°C)
Let the chicken rest for 5 to 10 minutes before serving
