Preheat the oven to 400°F (200°C)
Peel off the loose outer layers of the garlic bulb skin
Cut off about 1/4 inch from the top of each garlic bulb to expose the cloves
Place the bulbs on a piece of foil
Drizzle the exposed cloves with olive oil
Wrap the garlic tightly in the foil
Place the wrapped garlic on a baking sheet
Roast for 35 to 45 minutes, until the cloves are soft and golden
Remove from the oven and let cool slightly
Squeeze the roasted garlic cloves out of the skins
