Preheat the oven to 400°F to 425°F
Wash and dry the vegetables
Cut vegetables into evenly sized pieces
Toss vegetables with oil
Add salt and any desired seasonings
Spread vegetables in a single layer on a baking sheet
Leave space between pieces
Roast for 20 to 40 minutes
Stir or flip halfway through
Roast until tender and browned
Remove from oven and serve immediately
