Drain canned salmon and remove skin and bones if desired
Flake the salmon into a bowl
Add breadcrumbs or crushed crackers
Add egg
Add mayonnaise or mustard
Add chopped onion or green onion
Add salt and black pepper
Add optional parsley, dill, or lemon juice
Mix until combined
Form into small patties
Heat oil or butter in a skillet over medium heat
Cook patties until golden brown on both sides
Serve hot with lemon or sauce if desired
