Pat the roast beef dry
Season all sides with salt, pepper, garlic powder, and onion powder
Optional: sear the roast in a hot skillet for 2 to 3 minutes per side
Place sliced onions, carrots, and potatoes in the bottom of the crock pot
Put the roast on top of the vegetables
Add beef broth, Worcestershire sauce, and optional herbs like thyme or rosemary
Cover and cook on low for 8 to 10 hours or on high for 4 to 6 hours
Check for tenderness with a fork near the end of cooking
Remove the roast and let it rest for 10 to 15 minutes
Slice or shred the beef
Serve with the vegetables and cooking juices or gravy
