How To Cook Sea Scallops?

Pat the sea scallops dry with paper towels

Remove the side muscle if present

Season lightly with salt and pepper

Heat a skillet over medium-high heat

Add a small amount of oil with a high smoke point

Place scallops in the skillet without crowding

Sear for 1 to 2 minutes on the first side

Flip the scallops

Cook for 1 to 2 minutes on the second side

Remove when the centers are just opaque

Serve immediately
