Pork shoulder or pork butt
Garlic
Salt
Black pepper
Oregano
Cumin
Olive oil
Sour orange juice or a mix of orange juice and lime juice
Vinegar
Bay leaves
Optional adobo seasoning
Optional sazon seasoning
Score the pork skin and fat
Crush garlic with salt, pepper, oregano, cumin, oil, and citrus juice
Rub the marinade all over the pork and into the cuts
Add vinegar and bay leaves
Cover and refrigerate for several hours or overnight
Preheat oven to 325°F
Place pork in a roasting pan
Roast covered until tender
Uncover near the end to brown and crisp the skin
Rest the pork before slicing
Serve with pan juices
