Cut the skin into small, even pieces
Pat the pieces completely dry
Season with salt
Let the skin dry further if needed
Heat oil in a deep pan to 375°F
Fry the pork skin pieces in small batches
Cook until puffed and golden brown
Remove with a slotted spoon
Drain on paper towels
Sprinkle with more salt if desired
Serve immediately
