Wash the griddle top with warm water and mild soap
Rinse thoroughly and dry completely
Turn on the burners to medium-high heat
Let the griddle heat until it changes color
Apply a thin layer of high-smoke-point oil to the entire cooking surface
Spread the oil evenly with a paper towel or cloth
Let the oil smoke off completely
Repeat the oiling and heating process 3 to 5 times
Turn off the heat and let the griddle cool
Wipe on a final thin coat of oil after cooling
Store the griddle in a dry place
Re-season after cleaning, rust, or heavy use
