Pat chicken thighs dry with paper towels
Season both sides with salt, pepper, and any desired spices
Heat a skillet over medium-high heat
Add oil to the skillet
Place chicken thighs skin-side down if skin-on
Cook without moving until browned and crisp
Flip the thighs
Reduce heat to medium or medium-low
Cook until the internal temperature reaches 165°F
Cover the pan if needed to help cook through
Remove from heat
Rest for a few minutes before serving
