Cook 2 cups of rice and let it cool
Heat 1 to 2 tablespoons of oil in a pan
Crack 2 to 3 eggs into the pan
Scramble the eggs until cooked
Remove the eggs from the pan
Add a little more oil if needed
Add chopped onion, garlic, or vegetables if desired
Stir-fry for 1 to 2 minutes
Add the cooled rice to the pan
Break up any clumps of rice
Add soy sauce, salt, and pepper to taste
Mix in the cooked eggs
Stir-fry everything together for 2 to 3 minutes
Serve hot
