Wash and dry the vegetables
Cut vegetables into even-sized pieces
Heat a wok or large skillet over high heat
Add a small amount of oil
Add aromatics like garlic or ginger if desired
Add the hardest vegetables first
Stir constantly with a spatula or tongs
Add softer vegetables next
Cook until vegetables are crisp-tender
Add sauce or seasoning near the end
Toss to coat evenly
Remove from heat immediately
Serve hot
