Drain the hot water
Immediately transfer eggs to an ice-water bath for 5–10 minutes
Tap eggs gently all over on a hard surface
Peel under cold running water or in a bowl of water
Start peeling from the wider end where the air pocket is
Remove any remaining shell fragments with your fingers or a damp paper towel
