Wash the mango and pat it dry
Cut off both sides of the pit by slicing along the flat pit on either side
Score the flesh on each mango half in a crisscross pattern without cutting through the skin
Push the skin side outward to invert the cubes so they lift away
Cut the cubes off the skin with a knife
For an extra-smooth result, peel any remaining skin with a paring knife
Slice or dice as desired
