Crack 2 eggs into a bowl
Add a pinch of salt and pepper
Whisk until well mixed
Heat a nonstick pan over medium heat
Add a little butter or oil
Pour in the eggs
Let the eggs cook until the edges set
Lift the edges gently with a spatula
Sprinkle shredded cheese over one half
Fold the omelet in half
Cook for 30 to 60 seconds more
Slide onto a plate
Serve immediately
