Preheat the oven to 400°F (200°C)
Line a baking sheet with parchment paper or lightly grease it
Cut chicken breasts into finger-sized strips
Set up three bowls: flour, beaten eggs, and breadcrumbs
Season the flour, eggs, and breadcrumbs with salt, pepper, and any desired spices
Dredge each chicken strip in flour
Dip the strip into the beaten eggs
Coat the strip in breadcrumbs
Place the coated strips on the prepared baking sheet
Lightly spray or brush the chicken fingers with oil
Bake for 15 to 20 minutes
Flip halfway through baking
Bake until golden brown and the chicken reaches 165°F (74°C) internally
Serve hot with dipping sauce
