Boil chow mein noodles until just tender
Drain and rinse with cold water
Heat oil in a wok or large pan
Add sliced onions, garlic, and ginger
Add sliced vegetables such as cabbage, carrots, and bell peppers
Add cooked chicken, beef, shrimp, or tofu if desired
Stir in soy sauce, oyster sauce, and a little sesame oil
Add the noodles to the pan
Toss everything together over high heat
Cook until well combined and heated through
Garnish with chopped green onions if desired
