Preheat oven to 350°F (175°C)
Pat boneless turkey breast dry with paper towels
Rub with oil or melted butter
Season with salt, pepper, garlic powder, onion powder, and herbs if desired
Place turkey breast in a roasting pan or baking dish
Insert a meat thermometer into the thickest part
Cover loosely with foil if desired
Roast until internal temperature reaches 165°F (74°C)
Check for doneness after about 20 minutes per pound
Remove from oven and tent with foil
Let rest for 10 to 15 minutes
Slice and serve
