Pat the filet mignon dry
Season generously with salt and black pepper
Let it sit at room temperature for 20 to 30 minutes
Preheat a skillet over medium-high heat
Add a small amount of high-smoke-point oil
Sear the steak for 2 to 3 minutes per side
Sear the edges briefly
Add butter, garlic, and herbs if desired
Spoon the melted butter over the steak while cooking
Reduce heat to medium or transfer to a 400°F oven
Cook until the internal temperature reaches your desired doneness
Remove from heat and rest for 5 to 10 minutes
Slice and serve
