Thaw lobster tails if frozen
Split the top shell lengthwise with kitchen shears
Loosen the meat from the shell and lift it slightly on top
Fill a pot with 1 to 2 inches of water
Place a steamer basket inside the pot
Bring the water to a boil
Put the lobster tails in the steamer basket
Cover the pot tightly
Steam over medium-high heat
Steam for 5 to 8 minutes for small tails
Steam for 8 to 12 minutes for medium tails
Steam for 12 to 15 minutes for large tails
Cook until the meat is opaque and firm
Remove the tails from the pot
Serve immediately with melted butter or lemon
