Preheat the oven to 425°F (220°C)
Wash and dry the mini potatoes
Leave them whole or cut larger ones in half
Place the potatoes in a bowl
Add olive oil, salt, and pepper
Toss until evenly coated
Spread the potatoes on a baking sheet in a single layer
Roast for 20 to 30 minutes
Flip halfway through cooking
Cook until golden and tender when pierced with a fork
Remove from the oven and serve immediately
