Peel and cut potatoes into evenly sized chunks
Place potatoes in a pot and cover with cold water
Add salt to the water
Bring to a boil, then reduce to a simmer
Cook until the potatoes are very tender
Drain the potatoes well
Return the potatoes to the hot pot for a minute to remove excess moisture
Mash the potatoes with a potato masher or ricer
Add butter for richness
Add warm water a little at a time if needed for a smoother texture
Add olive oil for a dairy-free option
Add sour cream or cream cheese if dairy is acceptable but milk is not
Season with salt and black pepper
Mix until creamy and smooth
Serve immediately
