Wash and dry the red potatoes
Cut the potatoes into halves or quarters if they are large
Place the potatoes in a bowl
Add olive oil, salt, and pepper
Toss until evenly coated
Spread the potatoes in a single layer on a baking sheet
Bake for 25 to 35 minutes
Flip the potatoes halfway through baking
Bake until the potatoes are tender and golden brown
Remove from the oven and serve immediately
