Clean the morels gently with a soft brush or damp paper towel
Slice larger morels in half lengthwise to check for insects and dirt
Rinse quickly only if needed, then dry thoroughly
Soak briefly in salted water if very dirty, then drain and dry well
Heat a skillet over medium heat
Add butter or oil
Cook chopped shallot or garlic if desired
Add the morels in a single layer
Cook until they release moisture and it evaporates
Sauté until browned and tender
Season with salt and pepper
Finish with herbs, cream, or a splash of wine if desired
Serve immediately
Never eat morels raw
Cook thoroughly before serving
