Pound chicken breasts to an even thickness
Season with salt and pepper
Brine in salted water for 15 to 30 minutes, if desired
Preheat a skillet over medium heat
Add a small amount of oil or butter
Cook chicken breasts 5 to 7 minutes per side, depending on thickness
Use a meat thermometer and remove at 165°F
Rest the chicken for 5 to 10 minutes before slicing
Slice against the grain
Avoid overcooking
Use medium or medium-low heat for thicker breasts
Cover the pan briefly to help cook through without drying out
